Jalapeno Grilled Cheese with Tomato Soup and Arugula Salad
It’s been a while! Sorry for that. I had an exciting week with the Mighty Mighty Bosstones doing production after X-mas. Dead Ellington has been busy working on a new 7 inch so cooking has been on the back burner. Let’s get into it.
I made this very simple grilled cheese that had a crazy amount of flavor.
You will need:
- Horseradish
- 2 Jalapeno peppers
- Margarine
- Wild Arugula (I prefer the pre-bagged Trader Joe’s kind)
- Tomato and Roasted Pepper Soup (Trader Joe’s)
- Hard Cheese (I used Drunken Goat Cheese from Whole Foods)
- Any type of Rustic Bread
- tiny bit of Olive Oil

Coconut Chicken, Lentil Salad and Arugula
What you will need:
- 1/2 cup of lentils
- Panko Bread crumbs (or your own)
- Shredded Coconut
- Salt and Pepper
- Flour
- 2 eggs (or olive oil)
- 1/2 pound of chicken tenders
- Coconut Oil
- Mirepoix (or chopped celery, carrots and onions)
- Chopped Cranberries
- 1/2 a Lemon or Lemon Juice
- Arugula
This serves 2.
Whole foods sells Lentils in the “bag your own section”. I find it cheapest to go there then any other grocery store.
First thing I want to do is wash the lentil in order to get the starch off.

Broccoli-Chicken Pesto Pasta Bake
What you will need:
- Half a bag of Pasta
- 1 Bag of Broccoli
- 1/2 Pound of Chicken
- Olive Oil
- Salt
- Pepper
- Garlic (minced)
- Basil
- 1 Bag of Arugula or similar green
- Pine Nuts
- Chopped Pecans
- Ricotta Cheese
- Tzatziki Sauce
- Shredded Cheese (pepper jack, chedder)
- Dutch oven
This serves 2 so get more for bigger portions.
Most of the time I have no idea what I am going to make to dinner. As I go, I start to piece it together. I always try to use my frozen veggies or leftovers first so that nothing goes to waste. This pasta bake is simple while creating some great flavors.
First we want to set the pasta to cook. I used about half of a bag of pasta.

Acorn Squash with Tandoori Chicken and Rice
What you will need:
- 1 Acorn Squash
- Olive Oil
- Garlic (crushed or minced)
- Trader Joe’s Cranberry Cider or Pear Cider (apple cider would work fine)
- Salt and Pepper to taste
- White Basmati Rice
- 1/2 pound of chicken tenders
- Tandoori Marsala Spice (or use your own spices for the chicken)
- Half an Onion (chopped)
- Green Onions
- Parmesan Cheese
This serves 2 so get more for bigger portions.
I first thought of this when at Trader Joe’s I saw Acorn Squash. I had no idea how to prepare but using cooking apps and reading other cooking sites gave me some good ideas.
First let’s identify the acorn squash.
